CANNELLINI BEAN SALAD















This salad is a great healthy and vegetarian option for summer. The combination of lemon and garlic flavor blend perfectly to make a bright and savory meal.

Ingredients: 
  • One can of Goya Cannellini beans
  • 3 cups of Arugula Lettuce 
  • 1-2 Lemon(s) 
  • 1/2 garlic glove 
  • 1 peeled shallot
  • Extra Virgin olive oil 
  • Feta Cheese 
  • Salt and Pepper 
Dressing: In a bowl zest one lemon and add extra virgin olive oil enough to lightly cover lettuce. Approximately a fourth a cup. Squeeze in one lemon into the mix.

Finely chop shallot and garlic clove. Saute in a pan with olive oil until garlic begins to brown. Add rinsed and strained Cannellini beans. Squeeze one half a lemon. Add salt and pepper-season to taste. 

In a large bowl add lettuce and toss in dressing. Add Salt and pepper.  On top of Salad add the Cannellini beans and Feta. Enjoy!
